Malts

Our wide range of quality malts is based on pure barley, rye or wheat, that have been harvested in northern Scandinavia. Through a special production process fresh raw grains are refined into rich liquid extracts or powder.

Malt is a natural sweetener and gives the baked product a unique rich taste that varies from mild and sweet to deep and robust. It also gives a nice appetizing colour. Malt products promote the fermentation process, by nourishing the yeast so that sugar does not need to be added to the dough. Furthermore, malt retains moisture in the crumb, which improves the freshness and prolongs the shelf life of your baked product.

Malt can be diastatic, i.e. have enzymatic power or non-diastatic. Diastatic malts contain natural enzymes, which decompose the starch to sugar. They are used for pre doughs, like sourdough, in order to accelerate the fermentation process. The diastatic power is different in different malt products and has to be considered when choosing the appropriate malt for your application.

5310 Baking Malt Special
5310 Baking Malt Special
Liquid malt extract produced from barley. Gives a light colour and a mild, rich and sweet malt flavour. Can successfully be applied in French and crusty loaves to make the crust crackle in a nice way. Also suitable for rusks, crackers, cereals and snacks.
5331 Baking Wort Special
5331 Baking Wort Special
Roasted liquid malt extract produced from barley. Provides a strong roasted and sweet malt flavour and a characteristic reddish brown colour. For use in festive dark bread.
5336 Dark Malt Special
5336 Dark Malt Special
Roasted liquid malt extract produced from barley. Provides a natural dark colour and a rich malt flavour. Ideal substitute for caramel.
Powder
5323 Crushed Wheat Malt
5323 Crushed Wheat Malt
Malted and crushed wheat. Enzymatic power 300-400 wk. Provides a distinctive malty taste and increases the fibre content of the bread. Applied as decoration on top of the bread, it tolerates high temperatures without getting burnt. Does not need to soak before use. The product does not lend itself for use in pre-mixes, due to its enzymatic power.
5326 Malted Rye Flakes
5326 Malted Rye Flakes
Produced from malted and rolled rye. Diastatic power <10 wk. The flakes have a light colour and a mild and sweet malt flavour. Gives a coarse bread with a nice eating structure. The flakes can also be applied as decoration on top of the bread.
5327 Rye Malt Powder

Crushed rye. Provides a rich colour and distinctive malt flavour, also at a low dosage rate. For use in a wide range of items, from bread and morning goods to rusks and crackers.
5325 Rye Malt Powder Fine

Finely ground rye. Gives a nice rye flavour without visible grains in the baked product.
